Canning Chicken Tutorial

For those of you that missed my enrichment class here is a step by step look at Pressure Canning Chicken

Step 1: Clean jars and place lids in a small pot with water to boil
Step 2: Prepare your chicken by cutting into smaller pieces so you can "squish" it in the jar easier
Step 3: Using a wide mouth funnel put raw chicken into jar and add either 1 tsp real salt or 1 tbsp chicken broth powder.

Then add up to 1/2 cup water using a spatula to help it go all the way down and release all the air bubbles. Leave 1 inch head space.

Step 4: Clean rim of jar and place lid on and tighten.


Step 5: Place jars into pressure cooker with water about 2 inches deep.

Step 6: Close lid and watch the pressure rise.

Step 7: Once the pressure reaches 15, regulate your heat and set timer for 75 minutes for pint jars or 90 minutes for quart jars.

After the timer rings turn off heat and leave it alone! Let the pressure fall on it's own, do not do anything to speed up the process. Once it's safe to open the lid, open it away from you so you don't burn yourself with the steam. Remove jars from pressure cooker and place on a towel to cool. As they cool you will hear the blissful sound of popping and this is how you know you have succeeded!

Katie, Thanks for the helpful info. I got a pressure canner and am very happy with it. I canned chicken and green beans. Yeah for food storage.
